Herbs and Spices Fruit Dessert Recipes Summer Special Recipes
If you plan on eating fruit for dessert, it doesn't mean that you have to eat them plain. Here are some delicious fruit desserts using healthy herbs and spices that are perfect for the hot season:
Peach and Basil Bites
What you need:
4 peaches, pitted, peeled and sliced into wedges
1 tbsp. fresh basil
1 tbsp. granulated sugar
1/2 tsp. grated lemon zest
1/4 tsp. salt
For the topping:
1/3 cup chopped almonds
1/3 cup brown sugar
1/4 cup all-purpose flour
3 tbsps. cold butter, cut into 6 pcs.
1/4 tsp. salt
Heavy cream for serving
To make the filling, combine the basil, granulated sugar, lemon zest and 1/4 tsp. salt in a medium bowl. Add in peach wedges and coat. Divide the filling among 4 small round baking dishes. Set aside. In a separate bowl, combine almonds, brown sugar, flour, butter and salt. Use clean hands to mix ingredients together until the mixture is crumbly. Top the basil and peach filling with the crumbly mixture and bake in a pre-heated oven (400 degrees Celsius) for 25 minutes or until golden brown. Allow to cool, drizzle with heavy cream then serve.
Apple and Sage Cake
What you need:
3 eggs
3 cups peeled and shredded red apples
1/4 cup finely chopped sage
1 1/2 cups all-purpose flour
1 1/2 cups sugar
3/4 cup canola oil
1 1/2 tsp. baking soda
1 tsp. salt
1 tsp. unsalted butter
Whisk together eggs, sugar and canola oil in a large bowl. Add flour, baking soda and salt and mix well until all ingredients are well-blended. Stir in apples and sage. Butter a large baking pan lined with parchment paper. Pour the apple and sage batter into the pan and bake in a pre-heated oven (375 degrees Celsius) for 25-30 minutes or when a toothpick comes out clean when inserted. Cool completely before serving.
Honey and Lavender Ice Cream
What you need:
5 egg yolks
2 cups whole milk
1 cup heavy cream
1/3 cup honey
1/4 cup dried lavender
1/4 cup sugar
Beat egg yolks and sugar in a medium bowl using an electric mixer. Use medium-high speed for 4-5 minutes until mixture is thick. Set aside. Bring milk, honey and lavender to gentle boil in a medium saucepan. Strain to discard lavender then bring half of the mixture back to saucepan. Pour the other half into the egg mixture and combine well. Pour the egg mixture into the pan and cook over low heat until mixture becomes thick. Remove from heat and stir in cream immediately. Allow to cool then freeze in an ice cream maker, following manufacturer's instructions.
